Highlightin’ the Day

I think the presentation went well!  My voice was a little shaky at the beginning, but I simply let out a laugh, told myself to slow down (yes…literally, out loud ;) ) and continued on with the presentation just fine. 

I felt on cloud nine after all was said and done.  There are still a lot of projects and papers to complete before graduation, but it sure felt good to finish this presentation! :D   Some other highlights of the day:

Highlight #1: LUNCH!

I packed some leftover Veganomicon Snobby Joes  (click for recipe!) with some chopped baby spinach and 1/4 an avocado, along with some kashis for dipping.  I liked it even better chilled as a lunch today then while eating it hot in a wrap last night. :D   So yummy!

Highlight #2: Long WALKS!

As most of you know, I’m still recovering from a knee and foot injury (i.e., maximum running = once a week.)  The first month of not running felt like absolute torture and I still have my moments ( ;) ) but I’m definitely falling in love with long walks.  They’re especially fun when a walking partner is involved, and I love how it’s a low impact workout, which allows me to go a couple of times a day.  These past few days have involved a long walk in the morning and shorter walk after supper.  LOVE it! :D

Highlight #3: Quick and Simple Dinners :D

Sometimes you can’t beet simplicity.  Simply steamed asparagus.  Simply cooked brown rice.  Simply cooked haddock with a bit of Organic Late July Crackers and a pat of butter.  Simple.  Delicious.  Simply Delicious. :mrgreen:

Highlight #4: Vacation Days

No classes tomorrow = catch up day.  Who doesn’t love a catch up day now and again? :D

Highlight #5: Memere’s baking :D

My Memere baked a strawberry rhubarb pie today and I savored each and every bite.  She makes the. best. crust. ever.  So light and flaky.  It was a tiny peice but hit the sweet spot perfectly. :D

Highlight #6: Chillaxin

I’m just now relaxing with the “Joy of Cooking” and the Biggest Loser.  :D  

Question: What is one of your favorite leftovers to use for the next day?  I love using leftovers!  One of my favorite leftover items to have is brown rice because it’s so incredibly versatile and pairs perfectly with a variety of mixed beans, salsa, cheese, avocado, and/or different spices.  So simple but so good! :D
