screaming summer

Say hello to the new, temporary coffee carafe. 

I never did understand why coffee carafe’s are made to be so thin.  It’s as if they could break at any given moment.  And yesterday as I was washing dishes, I thought about this.  And then I reached for the carafe.  And it fell.  And broke.  Into a million and one pieces.

Hence the make-shift and (hopefully) temporary coffee carafe.  A girls gotta do what a girls gotta do.  Especially when it comes to coffee.

Breakfast 

Oats In A Jar!!!

I took my normal mix of overnight oats and filled up an almost empty peanut butter jar.  And for crunch, I sprinkled on about 2 T. Galaxy Granola Hint of Honey and 1 tsp chia seeds.  Gotta have that c-r-u-n-c-h factor!

Morning Snack: Nectarine and a Babybel cheese

Lunch

I took my lunch (a side salad topped with leftover snobby joes and some kashis on the side) outdoors and into my backyard today.  And I just sat there, taking in the quiet sounds of nature.  It was wonderfully relaxing.  Sometimes I find it hard to live just in the moment, but it’s worth the effort.

Afternoon Snack: 1 c frozen wild blueberries, 1/2 frozen banana, 1/2 c. milk and the last of the Galaxy Granola Hint of Honey (which was my favorite, by the way!)

I’ll bet this sorbet style snack would be even more amazing with less milk.  If you have a powerful blender, 1/4 c. of liquid might work best. :D

Dinner

Summer should be full of cookouts, bbq’s and fun.  And chicken sausages. 

Tonight’s dinner was practically screaming summer and I couldn’t have been happier.  This is one of my favorite summer dinners.  And it couldn’t be easier to throw  together.  Al Fresco sweet italian chicken sausages.  Sauteed onions and peppers.  Trader Joe’s ketchup.  Whole wheat roll.

Everything was perfect and delicious.

+ a simple side salad with olive oil and sea salt to round out the meal
