What day is it, again? ;-)

Somehow I couldn’t get over my moodiness today.  I don’t know whats with me, I’m normally an upbeat person.  But for some reason, I couldn’t get out of my Friday Funk, and with no run scheduled in, I couldn’t exactly stomp it out either.  At least these types of moods don’t typically last long.  I’m sure tomorrow’s long run will help. 😉  With Saturday being booked with plans already, I need to take advantage of tomorrow’s free morning hours. 

Sorry to be a Debbie Downer with my mood…not to worry, I’m sure I’ll be back to normal by tomorrow!! 😀

This morning, there was not one type of fruit in the house but the frozen blueberries.  So I went with an oldie but goodie.  Blueberry Oats! 😀  Same as yesterday, and just as tasty.

Then I was off to go grocery shopping.  I love going in the morning, when it’s less busy and I can take my time. 😀  I talked guacamole with a fellow avocado lover, finally remembered to bring my reusable shopping bags, and handed in some great coupons—twas a successful shopping trip. 😉  Today is also the last day that I’ll be responsible for family grocery trips.  My mom is going to be taking over next week once school starts, since I won’t be home until late on most days.  Of course I’ll still be cooking and baking once in a while.  I enjoy it in the same way as I enjoy running…it’s a chance for me to zone out and unwind! 😀

But now I’m getting ahead of myself.  Before shopping, I ate the last of the whipped cottage cheese with some kashi go lean, since I was planning on a late lunch.  As always, I avoided going grocery shopping on a hungry stomach.  😉

I went a little crazy for lunch. 😀

On top of chopped beet greens & tomatoes, I piled on the last of the lentils from last night, topped with guacamole, and sprinkled with a crazy amount of cilantro.  Just the smell of cilantro makes me so happy.  It’s such a wonderful herb, and I figured it was worth buying a fresh bunch.  It’s kind of like almond butter.  Good on everything.  😉

I also had some kashis on the side for crunch!

Dessert was a juicy but tart grapefruit.  Perfect.

What did I get in the afternoon mail delivery?

A delightful package filled with interesting food?

A new magazine?

None of the above. 😉

My biochemistry book finally came in.  This will be my very last required chemistry class.  I can not wait to complete this class.  I remember when I first entered in as a nutrition major, I almost didn’t go through with it out of fear for all the science.  Well, speaking from a girl who never had chemistry in high school, if you have a passion for something, you will and can get through it with enough hard work!!  I’ve had a difficult time with chemistry, but I’m making it through with lots of help along the way. 😀

This afternoon was spent making the pizza dough for supper and making a granola-bar-turned-granola recipe.  It crumbled as I was cutting it, so I’ll just be using it for topping things with.  No problem there…I love granola and go through it pretty quickly.

Speaking of my love for granola, I included some in my afternoon snack of plain yogurt, 1 T. flax, and 2 T. Natures Path Pumpkin Granola.  So simple, so tasty. 😀

When I received the latest edition of Cooking Light, I knew immediately that I wanted to make the cover recipe.  I love trying new homemade pizza recipes, and this one sounded fabulous. 😀

Dinner recipe: Herbed Cheese Pizza

It was wonderful!!  I just made a few changes based on what I had on hand:

  • used all whole wheat flour
  • used feta cheese
  • used ground garlic since I was out of fresh (but I highly recommend using fresh if you have it!)

The dough was crispy but chewy, and the chunks of tomato and onion for the sauce were delightful.  Best of all, this recipe is super healthy, and extra veggies could be added on top as well.  I think red bell peppers, broccoli, and spinach would be great. 😀

I also loved how everyone had an invididual pizza.  It just felt fun! 😀  I ate a salad with raspberry viniagrette on the side.

My chiller was made with:

  • 1 c. frozen blueberries
  • 1 frozen banana
  • 3 dates
  • 2 T. natures path pumpkin granola—too bad today isn’t national granola day 😉

I’m excited for tomorrow’s long run.  The long miles are always my favorite, because I slow my pace way down and just zone out, which I think will do wonders for my friday funk.  And, can you believe that I just typed this and realized that today isn’t Friday at all???  Wow…yes, I really do need a long run….haha. 😉 

I’m going to go figure out my school schedule for next week and make sure that I have everything I’ll need.  Have a great Thursday night! 😀

  1. I hope you get out of your ‘funk’ soon.. that’s never fun. Avoiding grocery shopping on a hungry tummy is a very good idea. I have been proof of that several times, lol.

  2. I’ve been really cranky lately too! I don’t know what that’s all about but it needs to leave! haha.

    That salad sounds so yummy! Can you believe I’ve never had cilantro? What does it taste like?

    And biochemistry doesn’t sound too fun.. I’ll probably have to take it in a year or two! yikes!

    • Cilantro is such a unique herb. I really can’t describe its flavor. I do know that it’s the type of herb that some people hate and some people just love—*raising hand!*—and it tastes amazing on spicy foods, salsas, tortillas, wraps, chili, and things like that. 😀

  4. Ah, long runs are my fave, too! Your lunch and pizza both look divine. My “cilantro” is basil. Can’t get enough of it.

    I plan on doing some garlicky/mushroom lentil experiment for the weekend. Hope to get decent results so I don’t disappoint you, Ms. Life with Lentils. 😛

    I am mildly obsessed with cilantro this week after buying a fresh bunch and completely agree – the smell alone makes me so happy – amazing herb! That salad looks really good. As do the blueberry oats!!

    Sorry about the funk – you are such an upbeat person, it’s true! That shines through on the blog and I bet you’ll get that Friday feeling and some running endorphins going and all will be well!

  8. It’s so nice to hear another person saying they were “afraid” of the science going in as a nutrition major. I’ve been debating whether to choose nutrition or speech therapy. I know I would love both, but nutrition was # 2 simply b/c of the chemistry.
