Weird, huh?

It hasn’t hit me yet that I’m starting school tomorrow.  Not that you guys would have noticed, since I can’t seem to write one post without mentioning it. 😉  But its true.  I’ll probably show up to my chemistry class tomorrow and finally realize that my senior semester has started.  Weird!

Speaking of weird, I have a very interesting schedule this semester.  I’m a morning person, so it’s going to be interesting having afternoon classes.  I’m actually kind of happy for it though, because it means I have the morning for working out and homework.  😀  I’ve never once stayed up past midnight in college, and I don’t plan on it either.  I’d rather get up super early any day.  Weird, huh? 😀

So there it is!  And it all starts tomorrow.  😀

This morning I went with another oldie but goodie.  I couldn’t let a perfectly ripe banana go to waste—it belonged in a bowl of creamy morning oats! 😀 

  • 1/4 c. oats
  • 1/4 c. oatbran
  • 1 c. milk + 1/2 c. water
  • cinnamon and nutmeg
  • sliced banana
  • 1 T. flax
  • 1 T. raisins
  • 1 T. peanut butter—on top
  • 2 T. Natures Path Pumpkin Granola—on top

Mmm…sometimes the old school stuff hits the spot. 😀

I had only drank about 1/4 of this gatorade yesterday on the hike, and I didn’t know what to do with the rest.  So I froze it in the form of icecubes. 😀  I wish I would have had some popsicle sticks, because I totally would have made popsicles out of these…haha.

I made it out for a 4-mile run, but it wasn’t much to brag about!  My legs were still feeling sore from the hike yesterday, and I could feel them stiffening on me.  Especially during that last mile!  I decided to hold back a little and gave myself a short walking break in between.  As important as it is to push yourself hard sometimes, it’s equally important to pull yourself back when your body needs it. 😉

Once back, I had the most refreshing combination of milk and a giant bowl of watermelon.

Lunch came together in a breeze, due to the leftover dough from Thursday’s pizza recipe.  I also saved the lovely, chunky, garlicky sauce.  First I let the refrigerated dough sit out in a pam-sprayed bowl–covered with a dish towel–for a little over an hour.  Then I spread the dough out and topped with the sauce, 1/2 c. black beans, cilantro and guacamole made with 1/4 an avocado.  The crust was a little crispier/flatter then it was when I had originally made it, but it was still super tasty.  And you can’t beat how quick a meal it was to make. 😉

I had a side salad with black olives, cukes, tomatoes, and balsamic too.

Black beans + guacamole + cilantro on pizza may sound weird, but it’s surprisingly tasty.  😀

Mmm…I do hope you aren’t tired of seeing this combination, because I just love it so much. 😀  It’s my favorite snack/dessert option lately.

I’m a big fan of treating myself to little, simple things that make me smile on a daily basis!!!  Monday’s are my new coffee day, and today I went with a small cafe au lait with soy from a local coffee shop.  It was wonderful, and exactly what I was in the mood for.  I plan on trying a different flavor/style of coffee every Monday.  😀

With the new semester, I plan on making each day of the week have some small perk to look forward to, and need some ideas!! 😀  Both food and non food ideas are more then welcome, and I’d love to hear what little things make you smile too. 😀

I’m in love with this Cooking Light chili recipe.  It’s a staple in this house during the fall and winter months, and I always double it so I can freeze it for later.  Tonight I made a whole grain corn bread recipe from Moosewood to accompany the meal, but it would be equally good on top of brown rice, which is another way I like to eat it. 😀

But tonight, only cornbread would do.  Sometimes you can’t beat corn bread, hot from the oven.  This one was made with whole wheat flour and 100% stoneground yellow corn.  Loved it!

I ate a bowl of raisin bran for a snack tonight, in place of my normal smoothie because it was just too cold. 

Does unsweetened chocolate almond milk on raisin bran sound weird?  Yes, it probably does.  But the even weirder fact is that I really enjoyed it…haha.  Sometimes I just can’t describe my strange food combinations. 😉

Tomorrow is an early morning, so I should get my stuff organized before going to bed.  I need to figure out what I’ll be wearing and bringing…and where I’ll be going so I don’t get too lost going from class to class. 😉

  1. I can’t find medjool dates around here all of a sudden and the date and AB combo just isn’t the same without those big juicy dates! I’m all nostalgic looking at yours, and I can’t even tell if they are medjool dates or not.

    BTW you have totally turned me on to eating shelled pumpkin seeds. I’ve read about them but never felt motivated to try them. I finally did and I’m in love, and I owe it all to you Sarah my dear!

    And oh yes, I totally agree – it’s fun to push yourself but equally important to listen to your body and rein it in as needed. Way to be!

    Awww, your pizza looks so good! Who can’t resist bread, beans, and guac?!
    I’m drooling over your corn bread and chili! Does chili stay well in the fridge? I cook for one and I’d want to try making it and save the rest for lazy weeknights. Thanks! 😀

    • Yes, it does last pretty well! I usually eat it up within 3 days, but it also freezes pretty nicely when you might want it to last just a bit longer. 😀

  3. I just started grad school a couple of weeks ago for Accounting and I am the same way about getting up early and getting things done! I never once pulled an all-nighter (or even close) during undergrad and I don’t plan on starting now! 🙂

    Also…I notice you make a lot of Cooking Light recipes (I love them!) so I thought I would tell you that today I made the Banana Oatmeal Chocolate Chip cookies and they are delicious! They are not overly sweet and they remind me of a cross between oatmeal cookies and banana bread! I made them for a nice little study break today and it was super relaxing :-). I think they may have been from the July issue, but I’m not sure…they are on the website though.

    I don’t have classes yet but I really don’t want to plan any for the morning. I like to be active in the morning and sitting in a room taking notes does not constitute activity.

  5. Oh my gosh Sarah! There is a lot of good stuff in here! I have you to thank for medjool dates with almond butter so I fully support seeing those on here.

    I agree often the “classic old school” brekkies are just the best! How can you beat a bowl of creamy hot banana oats?! Not possible.

    Literally nothing about black beans, guacamole and cilantro on a pizza sounds weird to me!! It sounds fan-freaking-tastic! Even that side salad looks brilliant – I heart black olives!!

    Ooh and I am going to need to have a look at that cooking light chilli recipe in a few weeks when it cools down properly. It looks amazing!!

    I think it’s a cool idea to do something every day! Hmmm…there is already Cookie Friday- Sundays are a good day to do a ‘pamper’ day or something…manicure/facial to relax and feel refreshed for the week ahead 🙂

  8. I love the idea of dedicating something special to look forward to each day of the week. I used to do that last year without even realizing it. Tuesdays were always “swim days” and Friday’s were always “new movie days”.

    I believe ice cream day found it’s way in there a couple of times….per week. =P

  10. that mexican-inspired pizza looks sooooo good! there is a place by my house that makes funky pizza, and one of the pizzas they make is a burrito pizza. i think yours still looks better 🙂

  12. I am so making Chili this weekend, though mine isn’t as “light” as yours…….I use a Paula Dean recipes…..that includes 3 different beans and hamburger with tomotoes, onions, celery, etc. Yummy!

    It isn’t quite cool here yet in Florida but still feels like Fall inside……..though yes I know it is still a few weeks away “officially”!
