Simply Relaxin’

Today was nothing but relaxing.  Usually I always have something to do.  And usually I like it that way.  I hate sitting still for too long!!  But today, I actually kind of enjoyed having nothing on the agenda. 😀


Apples ‘n’ oats for everyone!  We didn’t actually get a snow storm last night like we were expecting, but I was still all hyped up to sleep in and make oats as if we had a blizzard…haha.  Three batches of apples ‘n’ oats later, we were all sitting in the living room, drinking coffee, and enjoying the Christmas tree lights.

  • 1/4 c. oats + 1/4 c. oatbran
  • 1/2 apple (plus munching on the other 1/2 😀 )
  • cinnamon, nutmeg and cloves
  • 1 T. raisins
  • 1 c. milk + 1/2 c. water
  • 2 T. each of walnuts and Natures Path Pumpkin Flax Granola

Perfect for a wintery morning! 😀

My legs felt surprisingly refreshed and not sore at all this morning—I was almost tempted to go for a run!  But I knew I’d be better off taking a “rest day,” so I bundled up nice and warm and went for a walk with my parents.  The snow was just beginning to fall, and it was just so gorgeous—definitely starting to feel more and more like Christmas! 😀

A while back, Al Fresco sent me some chicken sausages to be reviewed on the blog.  I have a whole list of recipes that I would love to try with them, but today everyone was in the mood for sausages—plain and simple—on the grill. 😀 

While they were heating up on the grill, I made a wonderful side salad.  The cilantro and avocado with sliced black olives made it anything but ordinary.  Cilantro makes everything wonderful, doesn’t it? 😀 

The sausages were full of flavor!  I think they would be perfect on top of pizza or mixed with pasta and broccoli with diced tomatoes.  You can really taste the asiago…YUM! 😀

Dad went with a big sub roll and topped it with the sauteed onions and mustard.  “Mmm’s” were heard all around the table.  😀  Definitely buying this flavor again!

Dessert was an incredibly juicy orange.

Followed with some family Conga—this game is hilarious! 😀

My stomach was so odd all day today.  I had absolutely no appetite and was only hungry enough for a light afternoon snack, which is when I went with a blueberry parfait—1/2 c. blueberries with 6 oz. yogurt and 2 T. granola. 

For dinner, I simply wanted ooey, gooey, carby-y goodness.  An almond and banana sandwich just seemed right. 😀  I grilled the sandwich to melty perfection.  The bananas tasted just like melted marshmallows.  It was perfect and hit all the right spots. 😀

+ a night snack.  I was too lazy to take out the food processor, but I was in the mood for hummus.  So I ended up taking the “lazy version” and mashed 1/2 c. garbanzo beans with a fork, added some lemon, garlic powder and cilantro, and added a bit of water to form a paste.  Then I topped it with some salsa and ate it with the kashis on the side.  Crunch, crunch, crunch…

I’m in my pajamas relaxing now, and totally enjoying my Sunday night. 😀  It was nice having a day of relaxation, especially since I’ll be busy all week starting tomorrow!  Hopefully I’ll get a morning run in too as long as the roads stay ice-free.

  1. I was not a huge fan of that flavor, but then again I didn’t have a grill then and I think you always miss some flavors without a good grill. I’ll have to give them another shot!

    and what is cranium conga? i happen to LOVE crainum, but i don’t know what the conga kind is!

  3. We eat those sausages all the time! So good! And yes fabbo on pizza. 🙂 My only concern is how the chickens are raised since that isn’t mentioned on the package. It says no hormones and antibiotics, but what about being cage free? Barn roaming? Something!
