My Tuesdays have quickly become my Mondays this semester. That means I need a quick breakfast, so I recreated yesterday morning’s meal and turned it into a chilled version.
Overnight Pumpkin Pie Oats 😀

1/2 c. oatmeal

1 large banana, sliced

cinnamon, nutmeg and cloves

1/2 c. canned pumpkin

1/4 c. milk
-
6-oz. plain yogurt (stirred in the next morning)
I made it an extra special, Monday Tuesday morning treat by eating it from an almost empty peanut butter jar. It was incredibly creamy and sweet.
I was ready for another run in the rain today, but this morning turned out to be absolutely perfect. It felt pleasantly warm, reminding me that spring isn’t too far off. Even the bluejays and robins seemed to be excited over the sunny, warm weather as they cheered me on through my run.
I kept a nice, even pace for 5-miles and came home to realize I was, literally, running late for classes. I’m determined to make life easier by getting everything ready the night before so that this doesn’t become routine! 😉 I did, however, manage to still squeeze in a post-workout snack…

With a long day of classes in store for today, my plan of attack when packing lunch was to include many different snack options. I never know when I’ll get the spare moment to grab something to nosh on, or when lunch might get pushed off due to running late for classes (hey, it happens!)
I brought along a yummy salad, which I ate half of in Management class and ate the rest in the library. There were also some kashis involved for carbs and crunch… 😀

Snack #1 was also eaten in the library: cheesestick and orange slices
Snack #2: pear and almonds (about an ounce–20 almonds)
Spreading my snacks evenly throughout the day definitely gives me the most energy and avoids any nasty crashing feelings or growling stomachs—both equally frustrating. 😉
You know those days before grocery shopping when the house just seems empty?
That was tonight.
At least there were eggs in the house! And I was in the mood for some scrambled eggs, so it was a win-win. 😀

…and cabbage?
I sauteed 1/4 cabbage with 1 tsp olive oil, salt and pepper. Originally I thought this was an odd way to add in some veggies. But once I mixed the eggs with a bit of the cabbage, I quickly realized that these two go really well together. Seriously. It had an Asian-style flare to it, and I think it would be especially good with hot sauce. I can’t wait to experiment with this idea!
Grabbing a bowl of cereal, watching the Biggest Loser, and getting ready for another early morning tomorrow. I plan on planning ahead to avoid running late tomorrow. 😉

My schedule is similar to yours: wake up, run, shower, class…it’s busy!
I definitely like to plan stuff out the day before. I’ll pack my meals, lay out my clothes, and get my notebooks together. Makes everything go a lot smoother 🙂
I’m all about packing the night before. Lunch, clothes, coffee maker set up. I also put my workout clothes right by my bed so I can roll out of the covers and into my sneakers. 🙂

I do the same thing – pack my gym bad and lunch the night before. 🙂 That way I can sleep as long as possible and just grab and go!
