SUH-weet!

I so loved your sweet potato creativity! :mrgreen: 

In fact, I loved it so much that I decided to create a “sweet potato challenge.”  It will officially start Monday.  But in the meantime?  Go out, buy a sweet potato, and plan on being creative while snapping your best tater shots! 😀  The result will be one massive sweet potato post at the end of next week, which will include all of your creations.  The only rules are to think outside of the box (i.e., sweet potato breakfast, anyone?) and let me (and the readers!) know when you created your concoction.

Sweet Potato Challenge—Starting Monday! :mrgreen:

This morning I had a big bowl of pb&banana&jam oats!

  • 1/4 c. each oatmeal and oatbran
  • 1/4 c. wheat bran (stirred in at end)
  • 1/2 banana, sliced
  • 1 c. milk + 3/4 c. water
  • toppings: scoop of cashew butter, 2 T. Vanilla Almond Galaxy Granola, and a small scoop of strawberry jam

I finally figured out what the Galaxy Granola tastes like.  Almond macaroons!  Yum!

We are literally out of everything in the house!  There was one lettuce leaf (I ate it…ha!), a bit of hummus, 1/2 of a cooked sweet potato, cereal, milk, 1/2 a red pear and granola bars.  That’s it! 

The sweet potato and hummus saved the day. 😉

  • 1/2 cooked sweet potato
  • 1/4 c. vegetable hummus
  • splash of balsamic vinegar
  • glass of milk

This is the first time I’ve ever tried hummus on a sweet potato.  I liked it!  😀

The sweet potato was humongous, but I was still hankering for just a little something more.  I decided to break into the last of my KIND stash (sad!) and pulled out the Sesame and Peanuts bar. 

I broke it in half and ate it with the 1/2 of a red pear, thereby calling the fridge and pantry completely empty!!

These bars would make a great replacement for when you really want a candy bar, because that’s exactly what they taste like.  It reminded me of the Oh Henry chocolate bars from Canada that I used to love as a kid.  Totally delicious!  But a little higher in sugar than I would normally like for a “snack.”  It made an awesome dessert though. :mrgreen: 

The grocery stores were packed today.  There was the cutest little old man that I was chatting with at the check-out lane, and he was telling me all about how yummy his roast beef sandwich was.  Then the cashier asked me if I was vegetarian as she saw that I was buying tempeh…haha. 😀  She said she wants to try it out, after I told her how yummy it was with pineapple and soy sauce. 

I love grocery store conversations. 😀

I also love a full fridge after shopping.

I really loved this snack of yogurt with flax, 1/2 a banana and Galaxy Almond Vanilla Granola. 

After a 11-mile bike ride and a 2-mile leisure walk, I was ready to make dinner.  The 40 degree weather left me wanting a refreshing chopped salad.  It felt like a touch of spring. 😀

  • mesculin greens
  • carrot
  • cucumbers
  • tomatoes
  • red onions
  • 1/2 c. black beans
  • red bell peppers
  • black olives
  • dressing: 1 tsp each of olive oil and balsamic vinegar + garlic powder, mustard powder and a splash of orange juice

On the side, I had two slices of homemade whole wheat bread.  It was lightly sweet and doughy…perfect! 😀

Off to make a snack and chat with Nicole and Nate—they just stopped by! 😀

Question: Do you think you’ll join in on the Sweet Potato Challenge starting Monday? 😉  I totally am!  The hard part is going to be thinking of which creation that I want to include in the Sweet Potato Hall of Fame post. :mrgreen:

    • Sorry…I didn’t really state the actual date to do it on, did I? 😀

      You can post your sweet potato creativeness on your blog, on *any* day of next week. And the Sweet Potato Hall of Fame post will be up on Saturday. 😀 I’ll have more “rules” on Monday (although, really, the only “rules” other then the end being Saturday, is that you have to be creative :mrgreen: )

  2. I would love to participate in a S.P challenge 😀 It’s spring break so I’ve got all the time in the world (sad, but true).

    I’m always super impressed when I read things like “I went for an 11 mile bike ride.” I guess I still think in “running” terms…but it still seems like a long distance!

  5. I think I accidently started as of yesterday night! I had a sweet potato with black bean stew and then I had a sweet potato yogurt mousse for breakfast this morning. Both were simply delectable. I still need to hop on the sweet-potato-and-hummus bus though.
