Vacation: The Last Hurrah

I’m going to miss the White Mountains when I drove home tomorrow.  A lot. 

In an attempt see the cup half full, I’m trying to remind myself of the fact that I have many more adventures to look forward to.  The Dietetic Internship, for one thing.  I have less than a month to go before it begins, and I couldn’t be more excited (or nervous!) 

As a means of saying “goodbye and until next time”, my parents and I took one last drive through the mountains.

 

We scrambled our way up Mt. Willard, one of the easiest hikes in New Hampshire that will give you views like these.  In about an hour, we were sitting on top of a rocky ledge, overlooking the mountains.  The mountains never cease to take my breath away, no matter how many times I’ve seen them.  It’s amazing how I can feel so large and small, all at the same time.

 

 

 I was responsible for packing the lunch, which I was more than happy to put together.  It’s pretty easy to pack for hiking.  Pack light, non-refrigeratable food items with a balance of protein, carbs and fat.  You can’t go wrong.

Besides, hikers are always hungry.  There’s no such thing as getting your food turned down when on a hike.  Trust me.

I packed some whole wheat tortilla wraps…

 

 …along with some chunk light tuna packets (remember, chunk light tuna is the lowest in mercury compared to the other kinds available), mini-mayo packets, and some freshly chopped lettuce that we picked up from a local farmstand.  I mixed the mayo in with the tuna packets and layered them onto the wrap.

 

 Nothing fancy, but it was totally delicious.  Especially after hiking.

 

 Now I’m skipping off to read before hitting the hay.  Tomorrow will be full of packing and driving so I’d better get a good nights rest.
