monday morning madness

I don’t care that it’s Monday.

I don’t care that it’s rainy and dark.

I don’t care that the electricity went out last night.  Or that I was out of bed by the ungodly—and completely unnecessary—hour of 5:00am (since I had no way of knowing what time it was until seeing the kitchen clock.)  Do.  Not. Care.

I don’t care.  I refuse to be grumpy.  Refuse

I didn’t say I couldn’t be tired though, now did I?  Because I was.  In fact, I was almost too tired to function.  I figured if anything was going to spice up my morning—making me feel energetic and ready for the new day—it would be a bagel.

I’m hooked on Thomas’ whole wheat bagels.  I covered it with almond butter and honey roasted peanut butter this morning, just because I can never make up my mind about such things (almond butter? honey butter? why not both?)  And bananas.  Sweet, marshmallow styled bananas.

Plus a big ol’ mug of coffee with soy.  Totally necessary. 😉

I like to pack my lunches the night before I actually need them.  I’ll sometimes wait for the morning of, but it never turns out quite the same.  For starters, I hate feeling rushed—especially in the morning.  And the end result is usually a less than stellar lunch.  Nothing is worse then opening up a lunch pack and seeing that I didn’t really put any thought into creating my midday meal.  What a downer.

Today I was prepared.  Last night I had a salad for dinner, so I just doubled up on all the chopping duties and created my lunch for today.  Easy Peazy! 😀

  • mixed romaine greens
  • carrot
  • cucumber
  • tomato
  • black olives
  • black beans
  • EVOO (extra virgin olive oil)
  • sea salt

I’m really into bread lately.  This Organic Multigrain Boule is fantastic.  It makes that crusty noise when you slice into it, but the inside is all doughy with specks of seeds and nuts. 

I smeared artichoke hummus all over a big hunk of bread for that perfect, carby counterpart.

So thankful that I brought along 3 snacks for the morning and afternoon.  My appetite was through the roof today, so they came in handy. 😀

My Moosewood Cookbook has been making a reappearance in the kitchen lately.  And I kind of like it.  A lot. 

Tell me this: what is more comforting than a bowl of soup and a grilled cheese quesadilla, on a cold, rainy evening?  Nothing.  I can’t think of one single thing. 

White Bean and Black Olive Soup and a grilled whole wheat tortilla filled with melty, stretchy, sharp cheddar cheese.  I grilled this baby up on a high heat to make the tortilla all crispy and flaky, while letting the cheese do its thing.  😀

My “tiredness” lasted the day.  Until—oddly enough—after dinner, when I went out for a 3 mile walk.  It’s true that exercise releases feel good endorphins, and I definitely felt that effect tonight. 😉 

I am so (so, so, SO) happy that I have tomorrow off from having to drive anywhere.  Wednesday and Thursday are going to be jam packed busy, so I’ll take all of the “relaxing” time that I can possibly get. 😉  Orientation for working in the high school for my food service rotation is this Thursday!  Already!!(?!?!)

Question: What is one thing about yourself that people might be surprised to know?  Okra is the only vegetable that I can honestly say I don’t like.

  1. Wow! Congrats on not getting grumpy girl! That stinks that you got up so early. 😦 Unfortunately my “body clock” is off so I’m up that early quite a bit. Luckily I’m a morning person. 😉 You’re right about the exercise though. When my twin and I go on amazing long neighborhood walks I feel so energized! I hope you’re able to get plenty o’ rest tonight! =)

    and i hate that sleepy-all-day feeling. ironically, if i’m ever going to come out of it, it’s after dinner, too! makes me feel like it’s just the atmosphere at work some days. enjoy your day off tomorrow, get some rest!! you must be excited to start your internship, though 🙂

  3. Black olives on a salad looks so good, I’m always looking for more fun toppings to add!
    It’s hard not to be grumpy with all that, but glad you made an effort to be happy:)

  4. I like packing my lunch/snacks the night before but this school year has been insane (ie…not that good) so I’m slacking on prep because I’m so darn tired!

    But you motivated me to go walk while there is still some light. And I’m going to go make up my bowls and bags right now.

  5. Boo, sorry for the rough start this morning! I’m a big pre-packer for my lunches too. I can never manage a good one when I put it off until the morning.

    People are always surprised to find out I have 4 tattoos. I don’t look like the “type” I guess. 🙂

    Everytime I visit your page, I contemplate going out to buy some bagels. Haha! Actually, I hate the store bought varieties that we have here, because they always seem to be like little bricks otherwise they are filled with HFCS :/ The only way I can get a decent one is at a bakery or something, and I still wake up craving oatmeal so it’s not really worth the effort 😛

  8. Hmm I can’t think of anything that might surprise people about me. Probably my music taste though. It’s all over the board.

    I love soup. Love it. I threw some barbeque beans into my tomato soup from the New Moosewood Cookbook to mix it up a little. The roasted green beans from the book were good too. Simple. I usually just broil or stir fry them but I really liked them roasted too.

  9. I LOVE okra!!!! Oh man, it’s so delicious when roasted! Surprising fact about me = I’ve never tried banana pudding. Not sure if that’s interesting or not, but whatever.

    And that soup looks so good! Too bad my roommates don’t like olives! 😦

    Something people are surprised to find out about me? Probably that I detest bananas. Can’t stand even the smell of them. And I’m a fitness nut who tends to get cramps, so people are always offering them to me. :/

  11. that bread looks soooo good 😉 Looks like some great meals! Olives are one of my favorite foods and I try to incorporate them into as many dishes as possible!

    I guess a fact about me that people are always surprised to know is my love for old big bad music and delta blues. I’m an avid swing dancer 😉

    That soup looks so good! I love that there are olives in there!

    I totally make my lunch the night before too — I think my brain just doesn’t work very quickly in the morning, because it takes me FOREVER to pack my lunch in the morning!
