Breakfast Bonanza, day 7 (day before the finale!!)

Today I wanted pancakes.

Or, rather, I really wanted oat cakes.  Mixed with cottage cheese, spices, and melty bananas.

I started with a gingerbread man, added a heart, and ended up with two mystery blobs.  The batter makes a nice large serving. 😉

The result was a little undercooked, as I lost my patience after the first flip.  It happens.

But thankfully, they were everything I wanted in my morning oat cakes.  I honestly think the slight undercooking made them all the more delicious.  The edges were crispy from the high heat, but the insides remained all gooey and sweet.  Perfect.

Cottage Cheese Oat Cakes

These are quick to throw together, which makes them nice for weekday mornings.  But they’re special enough to make for the weekends too!  Add some walnuts, pumpkin, cranberries, coconut, or grated carrot & raisins for a fun twist of flavors.

  • 1/4 c. whole wheat flour
  • 1/4 c. rolled oats
  • 1/4 tsp. baking powder
  • 1 T. crushed flax
  • cinnamon, nutmeg, ginger
  • splash of vanilla
  • 1/4 c. of soymilk (may need more, depending on how thick/thin the batter is!)
  • 1/4 c. cottage cheese
  • 1 banana, sliced
  • toppings: almond butter, coconut, reserved banana slices
  1. Mix flour, oats, baking powder, flax, and spices together.  Add soymilk, cottage cheese and vanilla, stir until moist (add more liquid as needed!) 
  2. Heat a griddle or nonstick frying pan over medium heat.  Spray with cooking spray and pour in the batter.  Slice bananas on top of oat cakes. 
  3. Once browned on one side, flip and continue cooking until desired doneness.  Add toppings as desired and ENJOY! 😀

Today I swallowed my pride.  Today I baked a batch of Otis Spunkmeyer cookies.

Our next door neighbor came over one day, selling cookies in order to raise money for her schools’ field trip. 

My family can never say no to such things.  It’s impossible.  Which is why we have two big tubs of otis spunkmeyer cookie dough sitting in the freezer.

Say goodbye to stirring.  And rolling out dough.  And even portioning.  It’s all pre-done. 

It’s almost depressing.

I uttered under my breath how rediculous it was that cookies were now so easy to make.  I wondered what Memere would have said.  Or past chefs before her. 

Would Julia Childs cry?

(I ate a cookie.  And I liked it.  Just don’t tell Julia.)

Question: Are you a sucker for buying from fundraisers, sales people, girl scouts, etc?  I definitely am. 😉

  1. Ahhhh! I love the pancake shapes! There are so fun! I actually like eating my pancakes a little undercooked. The gooeyness and doughiness is so comforting and yummy!

    My family is a sucker for fundraisers as well, especially when the person who comes to the door is a cute little kid! How can you say to someone adorable!!

  2. As A student, I have taight myself to not be a sucker for fundraisers, terrible i know! but i volunteer, so i figure its ok. I cant wait to see ur breakfast page, because im terrible at new brekkie recipes 🙂

    I don’t always fall for fundraisers. My mom used to buy all of my sister and my stuff when I was growing up, so we’ve become accustomed to turning other kids down. I guess that comes from growing up in a really small town? I don’t know. I do know that I’ve eaten a lot of fundraiser cookies in my day 😉

    as partying in the different dockside establishments.

    Regardless of automation, I believe it’s still important to understand the concept.
    But what good is sailing without food that appeals to the palate.
