roasting: making life easy

In case you didn’t know, it is perfectly okay to have breakfast for dinner.

In fact, it is more than okay.  I highly recommend it.  Especially when we’re talking fried eggs.  Whole wheat english muffins.  And loads of roasted broccoli (because this is way more appealing after 5pm than it is before 5am.)

I have been roasting so many veggies around here.  You’d think I was feeding a family of 5.  Which I’m not.  But I am feeding a family of 3 (that eats like a family of 5 when it comes to produce.)  And so, I’ve been mass-roasting broccoli, carrots, cauliflower, etc., and throwing them into big containers.  They’re quickly used up on everything from salads, to omelets, to an everyday wrapped sandwiches.

Honestly, I sometimes have a hard time convincing myself to take the time to cut up and roast a vegetable, especially during a busy week.  Laziness is what it is.  Sometimes I just have to give myself that push and make it happen.  Because it’s awesome to have a fridge filled to the brim with pre-cooked veggies at my convenience.  Well worth the effort.

Roasted Broccoli

  • 1-2 large head of broccoli, cut into bite sized pieces
  • 1 T. olive oil
  • garlic powder
  • sea salt
  • black pepper
  1. Preheat oven to 425 degrees.
  2. Combine broccoli, olive oil and garlic powder in a large bowl.  Place on a cookie sheet in a single layer.  Sprinkle with salt and pepper.
  3. Cook in oven for 10 minutes.  Stir and place back in oven for another 10 minutes or until browned.  Serve immediately or place in a bowl to be used for the upcoming, busy week.  ENJOY! 😀

On Sunday, I went to the American Dietetic Association’s Food Conference in Boston.  It was, in one word, awesome.  And not just because of all the free food that I ended up with…

Yes, I am a food hoarder.  😉

There were hundreds of food distributors talking about their products, as they handed out sample after sample.  Awesome.

But anyways, I didn’t exactly go there for the food (although this was a definite perk! :mrgreen: )  I went there to learn.  To meet practicing RD’s.  To hear some of the most recent research that dietitians are involved with.  I felt slightly overwhelmed with excitement, and found myself wishing that I had gone for the full, 3-day weekend.

I’ll be doing that next year.  In California.  I’m already dancing in excitement. 😀

  1. I love love LOVE roasted veggies. Every time I dive into a roasted sweet potato or eat roasted carrots or squash I feel like I had forgotten how amazing they are. You just can’t get that roasted flavour anywhere else 😛

    … I eat broccoli like crazy and it’s usually where I get my ‘veggie fix’. I prefer to steam it though, it’s the one veggie I would rather have without the oven!

  2. Hey! I am planning on studying to be a dietitian next year. Currently, I am enrolled at a liberal arts college, but I am not enjoying my studies here and would like something more health/food related. I love being healthy and advocating healthy lifestyles.

    I am curious, as I am looking forward to this career, how did you get involved with the ADA? I would LOVE to go to a conference. Do they only offer it once a year?   3. So jealous that you went to FNCE! I would have loved to go – but with my baby at home it would have been a little too hard to orchestrate. I really hope to go to California next year! It really is so inspiring to go to the conference – you leave feeling so motivated and proud to be in the field.

  4. I am so jealous of all of that delicious looking free food AND that you get to go to Cali!! I highly *adore* roasted veggies. That is the best way to prepare them…hands down. I also love a good, hearty breakfast for dinner. Veggies are a little more appealing in the evening. 😉

  5. I don’t know why, but I’ve never thought of roasting broccoli. I always just steam them. I’m def going to try roasting them. It sounds so good. I’m jealous of all those great samples you got 🙂

  6. loving ROAST VEG RIGHT NOW, ESPECIALLY CARROTS. I LVE HOW THEY GET SWEETER ITH THE COLDER WEATHER. ROAST VWG+HUMMUS SANDWICHES ARE THE BUSINESS, I ALSO SPRINKLE FRESH ROCKET AND SPINACH OVER EVERY SINGLE DINNER-NO MATTER WHAT IT IS, MAYBE I JUST LIKE THE COLOUR GREEN 🙂

  7. Roasted veggies and soups are my favorite ways to incorporate veggies. I’m a bit of a food hoarder too 😛 You made out like a bandit with lots of goodies! Hope you had fun and learned a lot. I haven’t been to any big pharmacy conferences yet but I’ll be going in the spring and am excited!

  8. The conference sounded awesome! Do you have to be a dietitian to attend? I would love to go next year, even though I won’t be starting my enrolled in a nutrition program until fall 2012.

    As for veggie’s, I eat them whenever and with whatever. In fact, I could eat them as a meal in themselves, though it wouldn’t be very well-rounded! My favorite way to eat them, though is naked. That is, with the bare minimum of seasonings. EVOO + Salt + Pepper + Veggies = PURE BLISS!

    Sounds like such a fun and educational event! I’m jealous of your mountain of samples.

    Hmm lately I’ve been making hearty vegetable soups, like sweet potato and carrot and potato broccoli! I’ve also been planning to make some squash puree so I can use it in morning oatmeal. So many ways to eat one’s veggies!

  10. Woah that is quite the load of samples! I hope the conferences that Dietitians of Canada holds has similar freebies. That will definitely be something to look forward to. 😉

    I think my favourite way to eat veggies is roasted too. But I also love a good, crisp salad.

  11. roasting is def THEE way to go! you can roast anything, and it tastes so much better than any other method of cooking. also, that swag looks amazing! hope you had lots of fun chatting with fellow RDs and learning lots.
